Cuy asado.
Okay, I really can’t leave this country without at least showing you how to prepare guinea pig (cuy). I didn’t eat it because it was 11 pm when it was finaly ready and I didn’t want to eat anymore. So you know, it was only $7 at a local market. $7 will let you buy a unique experience.
Basically, smash 18 garlic cloves and combine with 2 tablespoons of salt. Cover the cuy with the garlic and let it marinate for at least 1 hour. Put it on a grill. It’ll be in the grill for 1.5 hours. After taking it out of the grill, cut it into pieces and cook the inside on a frying pan. Voilá. Roasted guinea pig.
